   CUA 124 - Vegetable Preparation and Breakfast Cookery

1.0 Credits
Prerequisites: CUA 121  or CUA 103  must be taken concurrently if not previously completed with a grade of C- or higher.
Enables students to describe the characteristics of a variety of vegetable items including preparation procedures. Focuses on the variety of breakfast items and the preparation of vegetable items using a variety of cooking methods. Emphasizes the effects of seasonings and cooking methods on vegetable products. Students prepare, plate, and garnish breakfast orders to those ordered in restaurants with egg cookery and dairy products emphasized. This course has a fee that may be non-refundable.
