   CUA 242 - Intermediate Garde Manger: Charcuterie

1.0 Credits
Prerequisites: CUA 123  with a grade of C- or higher.
Teaches students the basic skills necessary for preparing a variety of popular charcuterie items. This advanced course begins with an introduction to ingredients and their application as students learn to prepare a variety of forcemeats. Students go on to learn the preparation of pates, galantines, terrines, and sausages. Preparation and the use of aspic and chaud-froid as covered. This course has a fee that may be non-refundable.
