CUA 251 - Advanced Garde Manger: Hors D’Oeuvres1.0 Credits Prerequisites: CUA 242 ; Minimum grade C-. This course introduces the student to a broad array of both hot and cold hors d’oeuvres and appetizers. Students learn to prepare various ethnic hors d’oeuvres including tapas, antipasta, sushi, classical and contemporary canapes, as well as show mirrors and platters. LECLB 22.5 Clock hours
