CUA 242 - Intermediate Garde Manger: Charcuterie1.0 Credits Prerequisites: CUA 123 ; Minimum grade C-. Teaches students the basic skills necessary for preparing a variety of popular charcuterie items. This advanced course begins with an introduction to ingredients and their applicaton as students learn to prepare a variety of forcemeats.
